This is a post-workout, pre-lunch salad inspired by my mother! It is full of vitamins C, K, A B1, 2 and 6, as well as omega-3, calcium and potassium! This raw zucchini, tomato, red onion and jalapeÃ±o salad is sure to brighten up your day!
1/2 a zucchini, peeled, sliced and quartered
3 cherry tomatoes, halved and lightly dipped in mineral salt
1 slice of red onion, halved and separated
1 small jalapeÃ±o, sliced lengthwise
Ground black pepper
Red wine vinegar (if absent, substitute for balsamic vinegar and enjoy it just the same)
Chia seeds (optional)
Peel, slice and quarter zucchini. Season with garlic powder.
Half cherry tomatoes and very lightly dip half of each half tomato in mineral salt. See the photo for reference because that might have been the worst description imaginable.
Slice jalapeÃ±o, lengthwise.
Slice red onion. Add all vegetables to a bowl.
Sprinkle mixture with chia seeds and black pepper.
Drizzle with red wine vinegar.
