This is a favorite game day appetizer with so much flavor! A little messy… and certainly not pretty… but they are damn tasty.


10 Minutes

  • 2 dozen large mushrooms, cleaned and de-stemmed

  • 1 lb hot Italian bulk sausage

  • 1 egg

  • 1/2 cup fresh grated parmesan cheese


30 Minutes

  1. Mix sausage, egg and [most of] the cheese in a small bowl.

  2. Stuff (mound) mushrooms and bake at 375 degrees for 30 minutes on a tinfoil lined pan. Note: these make quite the mess as the sausage cooks and oil drains, so I keep them from company’s sight until ready to serve!
  3. Remove from oven and briefly place on a paper towel.
  4. Transfer to a serving tray and sprinkle with remaining parmesan.

Additional Cooking Instructions

Want less of a mess? Omit egg and pre-cook sausage, drain and mix with parmesan cheese. Stuff mushrooms and bake at 375 for approximately 15 minutes.
