This was my birthday favorite growing up and no one makes it quite like my dad!

  • Yellow corn meal

  • Salt and pepper to taste

  • Catfish chunks (how ever much you intend to eat)

  • Vegetable or Canola oil for frying (about 1/2 a bottle)

  1. Mix cornmeal (enough to dredge the amount of fish you intend to eat) with a healthy amount of salt and pepper.

  2. Heat approximately 2 inches of oil in a frying pan, enough to deep fry, on medium-high heat.

  3. Thaw catfish completely and cut into desired-sized chunks.

  4. Rinse catfish in cold water, dredge in cornmeal (no flour), fry until golden brown and the fish begins to float in the oil. Once the fish floats, it’s done! Careful not to overcook. The fish should be white and fluffy when broken open, not greasy or gooey. You know your stove, play with oil heat to find your perfect cook temperature. Yum, yum!

  5. Easy as pie! Eat with tabasco, tarter sauce or plain!
