Ingredients

  • 1 (15 oz) can of chickpeas, drained and rinsed

  • 1 tablespoon olive oil

  • 1/2 tablespoon paprika

  • 1/4 tablespoon black pepper

  • 1/2 teaspoon cayenne pepper

  • 1/4 teaspoon salt

  • Pita flat bread

  • 1 cup Tzatziki sauce (click for recipe)

  • Red onion, sliced

  • Lettuce, coarsely chopped

  • 1 roma tomato, sliced and lightly seasoned with salt, pepper and garlic powder

Preparation

15 Minutes

  1. Drain and rinse chickpeas. Rub dry and remove skin from each chickpea – this is tedious, oh, I know. But it’s worth it. Takes anywhere between 5-10 minutes, highly dependent on outside distractions.

  2. Lightly toss chickpeas in olive oil, paprika, black pepper, cayenne pepper and salt.

  3. Spread chickpeas on a lightly greased, rimmed cookie sheet (I prefer using tinfoil for easy clean up).

  4. Roast for 15 minutes at 400 degrees. Careful not too overdraw or burn.

  5. Spread desired amount of tzatziki on to half of the pita bread. Top tzatziki with chickpeas and top with lettuce, onion and tomato. Enjoy!
