Yum! Thanks Mama’s Spot!

Ingredients

  • 3 lbs pork shoulder, excess fat trimmed

  • 6-8 cloves of minced garlic

  • 1/2 teaspoon salt

  • 1 teaspoon chili powder

  • 1 teaspoon black pepper

  • 1 teaspoon cumin

  • 1 teaspoon dried oregano

  • 1/2 teaspoon cayenne pepper

  • 1/4 teaspoon cinnamon

  • Juice of 2 limes

  • 1/2 cup fresh squeezed orange juice (approximately 1 large orange)

  • 1/2 cup salsa of choice

  • 12 oz beer of choice

Preparation

9 Hours    

  1. Heat crockpot on low. Trim excess fat from roast and rub minced garlic into the raw meat.

  2. Mix spices in a small bowl and season roast.

  3. Surround roast with beer of choice (I like to use a Mexican beer such as Sol, Tecate or Modelo Especial though have made this with Sam Adams Boston Lager and it’s just as good!)

  4. Add lime juice, orange juice and salsa. Cover and simmer for 8-10 hours on low.

  5. Shred in the crockpot and broil pieces for 3 minutes to crisp the tips of the pork for serving.

  6. Enjoy any way you please or try my plantain tostadas!
