20 Minutes

  • 1 lb green beans (unless you can find haricot verts, then lucky you! Buy those)

  • 1 red bell pepper
  • 1/2 medium-sized sweet onion
  • 2 tablespoons light brown sugar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon crushed red pepper
  • 1 teaspoon peanut oil
  • 3/4 teaspoon seasoned salt

  1. I hate to start out with such a tedious task, but if you were not fortunate enough to come across haricot verts, then you need to carefully slice each green bean in half… lengthwise… to make two thin green beans. I know.

  2. Boil your accomplishment in lightly salted water for 1 minute, covered. Drain and plunge in cold water. Very important. Then, drain well – pressing the green beans in between a towel or paper towel. Set aside.

  3. Core the onion and slice. Set aside.

  4. Thinly slice the bell pepper. Set aside.

  5. Mix together brown sugar, soy sauce and crushed red pepper.

  6. Sauté green beans, onions and bell pepper for 3-5 minutes, until beans look blistered. Sprinkle with seasoned salt.

  7. Remove from heat and add sauce mixture. Stir to coat. Serve immediately.
